Is there any way I can run planet coaster with my pc? I really want to try this game!!

No, you need to upgrade. Your GPU is too old, weak, and doesn't support newer graphics APIs Planet Coaster is likely leveraging. Also, your CPU and RAM are inadequate too. Your GPU probably won't even support minimal visuals, and your CPU will choke the moment a guest enters the park. Your HDD will thrash given that small amount of RAM.
Upgrade is absolutely necessary. You can check back here with proposed specs for an new machine to see what we think. If money is tight then consider one of those little NUC-sized gaming computers graphics card manufacturers have been putting out with Nvidia 10x0 or AMD 4x0 graphics.

How do people think this will run with the following:
FX-8350 (MSI Gaming Motherboard)
GeForce GTX 760
8 GB DDR3 (I plan to go up to 16gb later in the year)

Yes, this will be the one. You will be running at Low to Medium settings. It will run, but it might not run well enough for you. You'll have to try the game to find out. Your computer is very GPU-limited. I would advocate for a GPU upgrade before the RAM upgrade. 16GBs is nice, but getting something newer and better than that 760 is more important. See how the game runs on your 760 before deciding if you need to upgrade to a 480, 470, 1060, or 1050. Jumping from 8GB to 16GB of RAM will not make the impact a GPU upgrade will.
