Yeah when you're in "space mode" you can seamlessly walk inside your ship. It does seem to have a lot of customization.
Seems like you can also seamlessly walk around inside your ship in "ground mode" too. I did notice a cutscene at the ladder to transition from one deck to another (skimming that video you posted). This isn't the end of the world to me, though I wonder why they did it that way. Perhaps because ladders in all games can be a tedious mode of transit, so they decided to add "fast travel" to bypass the "grind" of climbing ladders. If so, I wouldn't be surprised if someone makes a "climb ladders" mod. They made a "real time carriages" mod in Skyrim, after all, and I actually used it instead of the fast travel default, because I found it extra immersive.

So when does this game actually go live? And if it's not live now, how are people playing it and posting videos?

The fade to black when climbing the ladder is where the game loads the rest of the ship interior. It's not too bad, but they could've made it less obvious. I hope modders improve it.

If they do a VR mod the fade to black is essential. Nothing more nausea inducing than a forced animation in VR.
 
It's not a huge issue, and I expected loading between land and space. Star Citizen is currently the only major space sim that does seamless walk into a ship, manual control and take off through the atmosphere to space.

Cough Space Engineers Cough.

Now let's talk about Starfield, not old dead games like Elite and Star Citizen 😋

There's also No Man's Sky, but you can notice a small "stutter" (at least I do) when entering the atmosphere and the game loads the planet.

That being said, there were/are mods for Fallout 3, Fallout 4 and Skyrim that would turn the game into a seamless experience. Instead of a loading screen, you could just open the gate at Whiterun or Megaton and enter the city. But it always came with a hefty drop in performance (at least for the PCs I was running at that time). I rather take a short loading screen and have good performance, than having a seamless experience that's spoiled by poor performance.

I think it was actually September 6th.

I just ran my computer through. "Can my PC run it?" The answer of course was a resounding NO. Neither my video card or my i5 processor are up to the task, even on the most minimal settings.

Looks like it's time to bite the bullet, get a new motherboard, an i9 processor, new video card, maybe some extra ram, and a much more powerful power supply, since 850 Watts may not be enough.

This current motherboard won't support Windows 11 anyway so I guess I gotta.

I don't think walking around inside is of any point in SF. It's more that these interiors actually have functions and activities connected to them. They are - more or less - meaningful for the gameplay and not simple immersion boxes.

Same here if done properly. I think of Odyssey as a perfect example of interiors ruining performance. This is especially noticeable (at least on my machine) when hovering over an Odyssey settlement in my ship. I know it's the full rendering of those interiors through the glass windows that kills my framerates. I'd rather they had done something like they do with cockpits in Legacy, where you can see into the cockpit, but on close inspection you'll notice it's a "dumbed down" version of the cockpit, a stage set of sorts, not the actual cockpit as seen by the pilot. That's fine by me, because this is what makes Legacy perform so much better. On the other hand, the abysmal low textures and lack of any detail of interiors of station and outpost buildings in Legacy (control towers, etc) is a bit too dumbed down. There needs to be some happy medium.

It'll be interesting to see what optimization tricks, if any, Starfield uses to keep interiors (not just ships, but buildings too) from bogging down performance while outside, and vice-versa.
