I think it's because atmospheric flight in SC is a joke, it's just flame animations and redout/blackout visuals. The moment you're in atmo, you can flip your ship upside down and just hang there, not moving. It's simplistic as hell, and poorly done.
As for loading screens, SC doesn't have them, but it also chokes to death when someone spawns in a large ship anywhere on the server. The servers have literally crashed because someone dropped a crate while tractoring it.
So the reason they "do much better" than Starfield in this regard is because there's nothing there. It's spaghetti code killing itself and being held together with spit and bailing wire. It's like saying "sure, the Olympic didn't sink, but the Titanic has a much nicer Grand Staircase." Well, sure, it's a lovely feature in ideal moments, but it didn't help much when the ship was taking on water.
