Great Cakes specializes on amazing Bird Mods, Most are made by her. Leaf and Monsoon also makes a ton of Birds mods but not as much as Great Cakes. I don't know too much about Gabboi making a ton. ScottPZ is more of that Exhibit guy. Narwhaler is good at the Waterfowl mods and makes a ton of amazing guys like Canadian Goose. Overall, theres a ton of amazing bird mods so you won't be unsatisfied.

You (and other people) could look into commissioning one of the top modders that should guarantee you some great models for those animals, I use a wide variety of mods for my zoos so the range of quality really differs but I settle with them anyway as I need that animal regardless. The rhea and mara fit in that "it's not bad but not good" group and definitely need an improvement to match the latest mods.
Most reliable is Nexus Mods Server, DM the modder.
Planet Zoo modding discord is really great. You can also get sneak peaks of the upcomming mods there.

It's definitely the last DLC, the Frontier Zoo/building in the campaign scenario is a metaphorical way for them to say that development on the game has now ended, it's up to players to continue that development and build whatever zoo they want now.I pray it won't be the last DLC!
I never thought Frontier would end development so early; I figured free flying aviaries and aquariums would be enough to generate interest in PZ2, so that they didn't need to "hold back" on adding more regular animals. I guess they thought that wasn't good enough; they prefer to maximise sales for PZ2 to cover even those players who have absolutely no interest in flying birds or aquarium fish in their zoos (definitely a small group).
