Atm, IFCS and balancing of yaw vs pitch thrust output is simply broken in AC.
However, flight physics are mostly accurate, except for some weight values of objects and analogous thrust strength moderation. Comparing this to the cartoony physics model of War Thunder would be unfair.
Even the most basic, brain dead game like War Thunder arcade has some basic energy management and limited angles of attack. Even with the ridiculous FMs you can still do simplified ACM like scissors, hammerheads etc.
In fact the reason I got bored of arcade mode when I first started playing was because I could fly above everyone and trick them into thinking that they have a chance in catching me, slowly increasing my climb angle to let them come within 0.9 before they stall. I used to rake in kill after kill from people too inexperienced to notice my energy state. And it took me some time till I learned how to time it right.
Even arcade mode has its skill ceiling and room to grow and then you can go to Realistic if you want something a little bit more challenging.
There is nothing even remotely tactical about AC right now. It's unlimited maneuverability and power on tap. Energy management is meaningless, there are no limits in maneuverability and no consequences for losing speed since you regain it in a couple of seconds. gunnery is also pretty irrelevant. It's reduced to a point and click game, scales below even arcade war thunder when it comes to skill required.
