uh, i hope this is not rude, but how about a bit more explaining for the why? There are many cool animals listed here, but i think actually saying why is not only more fun to read, but also more interesting. Sure, reasoning could just be "i think they look cool and i like them" but thats also a perfectly fine reason to name.
But without actually saying why, these are just lists of names were you can vaguely guess about the persons preferences.
Sorry from the start, i really dont mean to offend anyone, just wish for maybe more interesting discussion

To be honest, what kind of discussion are you even looking for? For my list, on any of the chosen animals the reasons are as follows:

  • I'm familiar with the animal in a zoo setting.
  • The animal makes sense for the game.

Just to see people's favorites from each group. Nothing too deep.

Idk, i just find it more interesting to hear why people like stuff. Discussion was poorly chosen as a word, i really just want to better get why people want certain animals.
It not only tells things about the people themself, but also might bring up reasons you never thought about yourself, making an animal here one of your new surprise favouites, and not just a name in a list

Takin or gaur
Wild boar or red river hog
Prezwalskis Horse or Somali wild donkey
Brazilian Tapir
Rhinos are tough but I’m going with Black for realism but in a perfect world were Sumatran rhinos were back and healthy in their population I’d go with them but having them in the game would help with visibility so it’s tough.
Pere David’s Deer
Dromedary
Capybara or created porcupine
Three toed sloth
Tassie Devil
Platypus
Iberian lynx
Maned Wolf or Bush dog
Spectacled Bear or Sloth Bear

  • Marsupials - Common wombat
  • Monotremes - Short-beaked echidna

  • Felines - Eurasian lynx

  • Procyonids - Coati
  • Pinnipeds - Walrus

  • Frogs and toads - Green toad
  • Salamanders and newts - Fire salamander/Near Eastern fire salamander
  • Caecilians - I don't know enough about them to choose...

    Bonus groups:
  • Afrotheres (elephants, hyraxes, aardvarks) - Rock hyrax
  • Ratites - Greater rhea
  • Waterfowl - Mallard
  • Galliformes - Domestic chicken (because many zoos I visited had them roam around alongside the peafowls)

  • Antelopes and bovines: Arabian orxyx (Oryx leucoryx)
  • Suines Collared peccary (Dicotyles tajacu). Not really suine, as it is in family Tayasuidae, but this was the closest group for them
  • Equines Mongolian (Przewalski's) wild horse (Equus ferus przewalskii)
  • Tapirs Mountain Tapir (Tapirus pinchaque) Only tapir species to live outside of tropical biome
  • Rhinos Black Rhino (Diceros bicornis)
  • Deer European Fallow Deer (Dama dama)
  • Camelids Dromedary (Camelus dromedarius) I know they are domesticated, but they are still a staple in many zoos.

  • Rodents Capybara (Hydrochoerus hydrochaeris)
  • Xenarthrans (anteaters, sloths, armdillos) Nine banded armadillo (Dasypus novemcinctus)
  • Marsupials Northern Hairy Nosed Wombat (Lasiorhinus krefftii)
  • Monotremes Duckbilled Platypus (Ornithorhynchus anatinus)

  • Felines Leopard (Panthera pardus) (Though I have a hard time choosing between them and servals. Leopards really are conspicuous in their absence from the game, though)
  • Canines Maned Wolf (Chrysocyon brachyurus) Though I admit I would love to see bush dogs too
  • Bears Andean spectacled bear (Tremarctos ornatus)
  • Hyenas Striped hyena (Hyaena hyaena)
  • Musteloids (badgers, wolverine, otters and relatives) Sea otter (Enhydra lutris)
  • Procyonids (racoons, coatis, and relatives) White nosed coati (Nasua narica) But ringtails--oh darn. Choices
  • Pinnipeds (seals, sea lions, walrus and relatives) Walrus (Odobenus rosmarus)

But wait, no Viverridae, Herpestidae, or Eupleridae, categories in the carnivora? We can't stop with meerkat and binturong. :)
  • Apes Siamang (Symphalangus syndactylus)
  • Monkeys Celebes crested macaque (Macaca nigra)
  • Lemurs and lorises Bengal slow loris (Nycticebus bengalensis)

  • Snakes Reticulated python (Malayopython reticulatus)
  • Lizards Great basin collared lizard (Crotaphytus bicinctores)
  • Crocodiles Mugger crocodile (Crocodylus palustris) We don't have many animals from this part of the world in the game
  • Tortoises Desert tortoise (Gopherus agassizii)

  • Frogs and toads Blue poison dart frog (Dendrobates tinctorius )
  • Salamanders and newts Hellbender (Cryptobranchus alleganiensis)
  • Caecilians Aquatic caecilian (Typhlonectes natans) The species that spend all their time hiding in leaf litter won't be visible in zoo exhibits, but they have these guys at some zoos.

I have to say this is harder for some groups than others, because of the size differences of the groups and the number of animals already represented in some vs others. My choices might change with respect to knowing future regional or biome-focused expansions.

If you could add a single animal to each of the following groups, what would you add?
