airplane dogfighting isn't what i would relate to dogfighting in space. They are always moving forward, and operating at extremely slow relative velocities among other things. So the way it's depicted really depends on that for suspense and action with the in-cockpit shots and external shots using the aspect of flying in air as basically a character in itself, either fighting the protagonist ...or helping them. You dont have that in space battles. Space is just a scene backdrop you can't really interact with.
bsg (the new series...obviously) does some good space dogfighting. They do a fairly realistic job at showing how ship to ship fighting would occur with ambush tactics (sitting cold and waiting for the enemy to come to you or hiding among roids or bigger ships) , 6 degrees of freedom thrust maneuvers and extreme relative velocity passes (jousting) and other things you'd expect to find in a space battle. And they make it visually exciting to watch. It's very close to the kind of combat you'd find in the elite universe - just the amount of fakeness so it can make a game (minus shields).
babylon5 has some good station combat scenes both involving fighters and itself and big ships. Though if the show follows just a regular pilot, you probably wont be showing much C&C scenes of such things.
Basically, fun space battles really depend on other objects to be in the scene that you can interact with. Since while yes, you can have a space battle anywhere in elite, they'd ultimately be boring to watch. You'd want them to be near roids for both cover or ambush scenes and to add a more consistent speed cue for action. Or you'd want them to take place in the atmosphere of a star around a nav beacon so you can add the threat of overheating and flares and other ships not involved in your battle etc. Or you'd want them to take place around a station so you had some goal-line to race to. etc. And rather than depend on the sound of a plane's engines to cue the viewer on health of the battle ...you'd obviously want to rely on covas complaining and instrument failures / klaxxons or your canopy cracking.
