Ok something similar to a world pack but i'll changes my picks a bit:
SA - this one is the hardest for me. If we could get the greater rhea as anniversary, i'll pick either the howler monkey or the coati. I really want the mara as well, and a couple more birds so i don't know what i'd choose
NA - Collared peccary
CA (a bit of cheating he) - Ocelot
Europe - Mute Swan
Asia - Blackbuck
Oceania - Victoria crowned pigeon
África - Secretaty bird vs Grey crowned crane, but first one wins for me.
Antarctica - Southern rockhopper penguin

Why don’t the cougars have color morphs? A quick google and you can see they exist, but there aren’t any in the game. Why?

Wow, I didn't either; I think it's more leucistic, though. Dang, the cats totally need new colormorphs:
- Leucistic Jaguar
- Golden tabby/strawberry tiger
- White stripeless tiger
- Pseudo-melanistic tiger
I thought that melanistic pumas weren't proven? Or maybe I'm thinking of something else
The Xbox ZT did really good with color morphs. They had multiple for every animal, including all that @DarthQuell mentioned.

Just give more colormorphs for alligator, dingo
I just want more colour morphs in Sandbox Mode.
In my case, it brings pizzazz and some personality to our animals. I wish that colormorphs were more popular in-game than standard animals, because those are the ones people flock to. Those are the ones getting the attention in the media, so it'd be nice if we could have, say, a white tiger be more popular than a standard tiger
Just to note that Zootierliste includes all zoos in Europe, not just EAZA institutions. If you wanted to see just the species in accredited EAZA zoos, then you would probably have to match the list of animals to the zoos on this map.
Also to add, there is no list for aza animals. Largely it is done by individuals on zoochat who compile specific species lists.

I think the reason why albino cougar was cut from the game is the same reason why mela maned wolf, albino beaver and albino taz we're cut: they are all know by a single wild individual with the existence is aknowledge by a one or two photos, so frontier probably though they are dubious colormorphs that don't exist in zoos and shound't be in the game.
Your list is pretty good Darth Quell! It covers most of what the game needs at this point.
