Buy VoiceAttack. I was pondering whether to do that, but darn are those 8 bucks worth it!
Using only a stick (and presumably keyboard) is quite the challenge. My first few attempts with only a JS (with around 10 binds on it) were a failure. Now I have all the utility binds attached to voice commands and I only use the stick for controlling the ship, as well as a couple of more things that are often used, such as Flight Assist on/off, and target enemy.
The rest is practice. But I do believe making it as comfortable for yourself as possible is a must. The stick is no use if you don't feel OK with the tenths, even hundreds of possible commands you might want to use to be good at the game.
After you practice enough and really start 'feeling' the stick, you might want to invest into a headtracking system. That's my next plan. At that point you will be able to look around freely and track targets with a lot more efficiency.
I still sometimes activate my mouse look, swap the joystick to my left hand, and look around in order to better understand what's going on around me. Gladly, I have left-hand training from War Thunder, where looking around and tracking targets meant everything almost always.
