Well, engineering does make things easier in terms of survivability, of course. That, or you lose utility by spending slots on HRP/MRPs/shield boosters. Most of my ships are either fast (600m/s+) or sturdy enough to withstand an alphastrike plus time to escape either by high- or low-waking (depending on who's after me, and how many).
Almost none of them are built to PvP - I'm not really into that too much at all and I value utility to get things done in the game in terms of PvE over trying to win fights vs other players. It's still fun to interact with them though, and keeps me on my toes, including when I think about building a new ship - Open survivability is almost always a key goal. Though some of my ships would pop quickly, but they're unlikely to get exposed to hostile players (for example my Tritium mining Keelback which will only ever be seen in SC very shortly, between the ring and my FC - before other players even spot me I'm already gone).
