Everytime I see one of these thread show up I feel compelled to mention the Thrustmaster Flight X HOTAS, about 30/40 quids, because it's the one I use and I'm having a blast with it.
I bought it thinking it was the cheapest and best way to try if I would enjoy the game with a HOTAS before wasting silly money on a Warthog. Now I don't even see the point into changing it. Sure whenever it breaks (and I know it will) I will go for a better one, but something tells me I might as well go for the same one again.
No brainer for that price.
EDIT: people will say it has limited buttons, but in all honesty I can't remember last time I reached for the keyboard apart from typing messages to other cmdr

Then it has to be the great good old Logitech Extreme Pro 3D. I still use it.
It has a stick twist axis, so you dont need pedals or other buttons for yaw or roll (depending on your axis choice). So you can have all pitch, yaw and roll in the stick. It also has a mini throttle at the base.

It's ok if you don't mind losing the second thumb trigger for firing secondary weapons, I would miss that though.
