Short answer to your original question - it is just fiction and people create the avatar they want to create, maybe they would add some backstory to the character so as to give it a sense of immersion but overall it is all just fiction. For myself, I'd want to make clear that I didn't find your question offensive if, as you say, you were "just curious". I've no reason to doubt that. If my comment came over as abrasive, it's because I've seen the same question asked numerous times on many forums for many different games, and it's very often spun to express derision.
There are, unfortunately, still many people on forums like this who are frightened of the notion of other people being different, or thinking or acting differently, or wanting to express themselves in different ways than their real-life situation might allow. And there are indeed also people who treat a character creator as an opportunity to just create a character, and don't have any particular motivation behind it except perhaps variety. As I said, people have many reasons.
But many people are made to feel as though they need to rationalise and justify their choice simply because someone else can't handle it. So they'll say things like, "Well, being a normal, red-blooded male, if I'm going to have to look at a character I'd obviously rather it was a woman!" - a way of distancing themselves from the choice they've made and re-establishing their masculine credentials. And I think it's a shame that anyone should be made to feel as though they have to justify simple and relatively inconsequential choices like these beyond, "I wanted to."
Hmm. Interesting comments here:

To me these points distil down to: "I like looking at women's bodies, so I play as a female character to maximise the time I can spend looking at women's bodies".

Makes me imagine a world where guys walk around town carrying inflatable sexdolls the entire time, so whenever they catch a glimpse of their own reflection in a window (eww! a male!), they can whip out the doll, stare at it and rub their thighs, going "urrrr yeeeeaaah look at that urrrr phworr" to block out the sight of their own hideous male form

You are viewing this through the wrong lenses. It's a problem with two dimensional/higharchical thought structure. Makes for simple arguments but never covers anything meaningfully. Theres a lot more to it than objectifying women and, contrary to popular belief, one can appreciate the phisical form and all the other aspects of a person simultaneously as well as broken up into parts. Denying physical attraction is denying your own biology. You are bringing things into the topic that aren't really there as the primary driver. Also, if you really want to break it down, then it has to be in much longer form than a forum post and who among us has the time for that?
In short, you are "disturbed" because you think it's an expression of sexism. I think there's a lot more to it than that. For example, I think my wife is hot but I also have a great deal of respect for her other qualities, including personality traits and raw inteligence. When I "objectify" her, I am certainly not demeaning her in any way. There are many reasons why a male might choose to go with a female character and very few of those are disturbing. If you want to analyse that aspect of playing as a sign of societal disjunction then you should weigh it against the in game mass murder many of us partake in as well. Do you truly believe that's what most people are fantasising about when they blow up an NPC or another commander?

The statements quoted are creepy (IMO) because they're fixating on the sexualisation of women's bodies.
I agree there are many reasons why a male might choose to go with a female character, and most are not at all misogynistic reasons, but my issue is with the subset of those who admit that their sole reason for choosing a female character is to provide them with sexual titillation, which yes I think is a misogynistic attitude.

At least I assume they are guys, with cmdr names like John, James etc.
It is overall a pixel character.....in many games you control female avatars or male avatars. I do play a male soldier in BF because i can't choose female soldiers.
Doesn't really bother me if guys using girl characters.

What Ozram is describing here is sexual attraction, and not in fact objectification despite what he goes on to say. Objectification means this:

Which I don't believe is what Ozram is describing. Finding people "hot" is not objectifying them, it's a perfectly natural human response. Objectification only starts when one starts to strip them of all their other attributes and treat them as a commodity.
